Kachní prsíčka s ostružinami a červenou cibulí s estragonem na medu

Název z michelinské restaurace? Ne, jen takový okamžitý singlíkovský nápad, jak ohromit návštěvu, která se ohlásila na poslední chvíli. Zklamal i Rohlík, že prý přijede nejdřív až ráno… Tak mi nezbylo nic jiného, než vycházet z obsahu mé lednice a mrazáku a z toho, že vím, že návštěva nepapá ryby. A zrovna jsem měla čerstvě natrhané ostružiny a na terase se zelenal estragon… Kachní prsíčka si rozumí se sladšími a ovocnými chutěmi a delikátní ostružiny spojené s medem, no mana nebeská! Návštěva jakoby to tušila, donesla velmi kvalitní Barollo a tak byl kulinářský zážitek završen.

Ingredience na 4 porce

  • 2 porce kachních prsíček
  • 1 červená cibule
  • 100 g čerstvých nebo mražených ostružin
  • 2 lžíce medu
  • lžíce citronové šťávy
  • čerstvé snítky estragonu
  • sůl, pepř

Příprava

Prsíčka omyjeme a nakrojíme kůži několika šikmými řezy. Počínáme si s největší opatrností, abychom nezakrojili až do masa. Do prsíček vetřeme sůl a pepř. Do řezů vmáčkneme snítky estragonu. Med smícháme s citronovou šťávou a trochou vody a směsí potřeme maso. Pořádně rozpálíme těžkou , nejlépe litinovou, pánev nebo pekáč. Prsíčka vložíme na suchou rozpálenou pánev kůží dolů a zprudka opečeme asi 5 - 7 minut. Nepodléváme, i když to k tomu svádí. Toto je nejdůležitější část celého procesu.Kůže se musí dostatečně vypéct. Prsa otočíme a ještě asi 3 minuty pečeme z druhé strany. Mezitím oloupeme cibuli a nakrájíme jí na hrubá kolečka. Přidáme k masu spolu s ostružinami, zalejeme zbylou medovou zálivkou a v troubě předehřáté na 180oC pečeme až je maso uvnitř pěkně růžové. Trvá to asi 20 minut. Kdo má, použije sondu nastavenou na 58 nebo 59oC. Maso ještě necháme v troubě asi 10 minut dojít. Krájíme na šikmé plátky, které podáváme teplé i studené.

Vhodná příloha k takto upraveným kachním prsíčkům je divoká rýže nebo quinoa. Za studena jsou ideální k listovým salátům.
